After obtaining my baccalaureate, I debated between becoming a medical doctor to save human lives or a scientific researcher to make discoveries that would make life better. As I am of the curious kind, I embraced a scientific career. However, I always kept in mind that I wanted to be useful to society and improve people’s well-being.

When I became a food scientist and was hired at INRA, I started to work on the mechanisms leading to the sensorial quality of dairy products. However, I was very frustrated that my work had such little impact on human life. I then began researching on food-related pathologies, such as allergies. Five years ago I spent a sabbatical year at the Institute of Food Research, UK, to investigate how food proteins are hydrolysed during digestion. This really helped me realize ways my own research could improve people’s health.

I currently head the Bioactivity & Nutrition research team at STLO. Our objectives are to:

  • understand the disintegration of dairy and egg products in the gastrointestinal tract
  • identify the release of bioactive molecules during digestion
  • determine the consequences on human health

One of my favourite topics is infant formula digestion by the neonate. I hope to one day find new ways of designing infant foods to make them more easily digestible by the neonate and limit possible adverse effects like allergies, gastro-intestinal pathologies, etc.
