Junior Research Scientist in the physico-chemistry
INRAE is recruiting researcher by open competition and offering permanent position at STLO unit Rennes in physico-chemistry of food protein assemblies.

Work environment, missions and activities

STLO is the largest public research structure in the world entirely focused on the study and valorization of milk and egg components. In the laboratory, multiscale structural studies of these components are performed as well as their interactions with plant-based constituents.

Moreover, the multiple functionalities of milk and egg-based components are analyzed, investigating both the native state and different modified states that result from food processing.

STLO is located at the Agrocampus Ouest campus in Rennes.

The laboratory is composed of 130 staff members ; 80 are permanent staff (36 full-time researchers, university lecturers and professors, engineers and 44 support staff), while others are PhD students, post-doctoral researchers and R&D staff of hosted companies. STLO is a dynamic unit organized into five disciplinary research teams, a technology platform and a microbial resource center.

ISFP team

You will be assigned to the Interactions, structures, functionalities of proteins (ISFP) team. This team focuses on the physical chemistry of molecular and supramolecular interactions and assemblies of food proteins. Beyond their nutritional value, proteins play a key role in determining techno-functional (i.e., texture, taste, color) quality of the food we consume. For this reason, members of the ISFP team aim to understand the relationships between structures, dynamics and properties in order to control functionalities (e.g., nutritiousness, ability to form gels, foams or emulsions) of these biomolecules within food matrices.

To develop your research, you will benefit from the rich scientific environment of STLO.

You will work closely with other physico-chemists in the ISFP team and, for the more applied aspects, with colleagues from other teams who will provide you with their expertise on food processing, technology and nutrition.

You will be encouraged to strengthen collaborations that engage the team already with other soft matter physicists and modelling experts present in Rennes, France and elsewhere in the world. Together, this network of collaborations will allow you to nourish your research and to develop multidisciplinary expertise. Within the laboratory, you will have access to a variety of separation and multi-scale characterization tools, including chromatography, calorimetry, spectroscopy, microscopy.

Training and skills

PhD or equivalent

You possesses a PhD in physical chemistry applied to biomolecules, polymers or colloids. Moreover, you possess working knowledge of the thermodynamics of biomolecular interactions. Additionally, mathematical and modeling approaches are familiar to you and form part of your theoretical assets.
Fluency in English is desirable and long term professional experience abroad is expected. Successful candidates who do not have such experience are requested to acquire it during an internationl internship that will be perforemd after expiry of the probationary year.
