Consumer preferences for seafood products in a context of deterioration of marine ecosystems and facing new food challenges: which interactions between environmental and health motivations?

This thesis project will seek to analyse the motivations of consumers and their developments in a context where public policies aim at a double objective of preservation of marine ecosystems and facing new food challenges (health and nutrition). This project is going to analyze the multi-labelling trend in seafood sector, to highlight the possible interactions between environmental and health claims, with the aim of better understanding consumer preferences for this new type of product. The final objective of this work will be to provide keys to understanding for the implementation of effective public policies encompassing all dimensions of seafood sustainability.
